A Graduation Celebration

Just as fast as I could blink, the graduation celebrations are over. The past few weeks have been nothing short of incredible, and what made it even more special were the friends and family that were around to share it. From the day of graduation to the graduation party held at my home and everyday in between, I have realized how truly blessed I am with great family and friends and all of the support they provide.

The graduation party came during a whirlwind of events; beginning my new job, memorial day weekend, out-of-town family and friends visiting, and transitioning from college to the normal everyday routine. However, a night of yummy food, drinks and friends was exactly what I needed.

Of course, the night was a success. Through the craziness, laughter and enjoyment of everyone’s company, it was a great way to kick off the summer. Not only was the company delightful, but I received a few adorable gifts that, although simple, were something I totally cherished. Some of my closest friends gifted the following that truly shows just how well they know me.

Given to me by one of my best college friends, who clearly knows my style, tastes and love for all things cute, this small gift was a perfect one. Another best friend of mine from college gifted me Lilly Pulitzer’s perfume, Squeeze. Finally, another favorite of mine, were these bracelets from a very close family friend. A best friend of my mom’s and a woman who has become a great friend to me over the years, knows how important my style is to me. Frugal Finds: Anchor Season is Here

Once again the clearance rack comes through, and this time with a trend that I hope never dies. Nautical trends, more specifically the anchor trend, is indeed one that I love. Shirts, sweaters, skirts, pants or shorts, no matter what you put them on I love it! Some may argue this is a trend that is currently in, but personally, I see it as a classic style.

I purchased these mint green and pink shorts from Old Navy for under $10. The pink cotton tee was also on clearance for under $5. I tied a small knot on the side to give it a little extra something and paired it with nude wedges and a cross-body purse from LOFT.

My favorite time of year to wear nautical pieces are of course in the summer. With that time of year almost in full swing, I can officially pull out all of my anchors and get ready to put them all to good use. This outfit will be perfect for any casual setting; dinner on the patio or a night out with my friends. One of my go-to looks is to pair my anchors with statement jewelry. App Feature: Map My Run

Working out and staying in shape has always been a great passion of mine, and honestly was never something I gave much thought to because of my involvement in sports. However, now that I am no longer a collegiate athlete I thought that I might put fitness in the back burner. This statement is far from the truth. Knowing that I do not have a sporting event to attend has motivated me even more to hit the gym and really try to diversify my workouts.

Over the past few months I have tried quite a few different approaches; crossfit, yoga and stretch focused workouts and circuit training. I have enjoyed all of these for different reasons and have been able to implement a little of each in my workouts throughout the week. But, there is one activity that has become prominent in my daily routine and the Map My Run Toptionsmore I do it the more I seem to enjoy it. Running.

I have always jogged to keep myself in shape, but ultimately, it was never something I really enjoyed. However, lately I have been running a few miles almost five times a week and I thoroughly enjoy it.

While running is really as simple as it gets when it comes to working out, I discovered a new and fabulous app that makes it even more simple and easy. Map My Run is an app that I have downloaded on my smartphone and instantly got addicted. It is a fitness tracking app that enables you to use your smartphone’s GPS to track and route a run.  When using your GPS on Map My Run you can record workout details such as, duration, distance, pace, speed, elevation, calories burned and the exact route traveled. Your workout results can be saved and reused for future workouts and routes, as well as, your comprehensive workout history.

When I discover a new app I usually get totally enthralled in it for quite a while. If it is a fitness app, likeDisplaying Screenshot_2014-05-20-16-51-38.png my current obsession, it becomes a great motivator to get out there and run and see exactly how the app works. At the end of the day it is a win-win situation, an awesome new app resource, as well as, great motivation to continue to my love for running.

I encourage you all to download the app on your smartphone and get out and run. Whether you run to relax, or as a way to push yourself, there is no better way to enjoy the fresh air. Choosing a route and running the exact distance, burning the exact calories has never been easier!

No matter who you are cooking for; the entire extended family, your significant other or dinner for a small family, you can never turn away from simplicity. Simple recipes have the ability to make the boldest tastes as well as, healthy options.

This recipe includes five ingredients, an easy prep, a quick bake and they are ready to serve. My mom’s Baked Zucchini Crisps are a great side dish for any meal or for a healthy snack.

One of the biggest challenges for me and healthy/clean eating is variety. When I get on kick of nothing but clean options I find myself getting in a routine of meals for breakfast, lunch, dinner and snacks. However, this recipe is a great one to add in for variety. Not only is it easy to make, but it is simple to adapt to any party size.

Ingredients:

  • 4 small zucchini
  • 2 tablespoons olive oil
  • sea salt (to taste)
  • pepper (to taste)
  • paprika

1. Preheat oven to 450 degree F

2. Slice zucchini in thin slices using a mandolin.

3. Toss zucchini with olive oil, salt, pepper.

4. Place on a baking sheet and sprinkle paprika on each slice.

5. Bake in oven for 25 to 30 minutes.

5. Remove and let cool. Serve as side-dish, snack or meat topper.

Graduation Has Come & Gone

Seven days have come and gone since the day of my college graduation. Of course, these days have been relaxing and I have enjoyed having no real obligations, however, it has allowed me to really process the idea that I am done with undergrad. This means no more living with my friends, sleeping in late, cramming, anxiety that an exam is in the near future, Netflix binges or the thrill of Saturday/Sunday brunch. Yet, while these are the moments that first stick out in my head, reviewing the many great experiences I encountered throughout college, I have realized that it is much more than the material I learned in class or was tested on through exams.

My college years were great; filled with influential professors, wonderful friends, memorable moments and experiences that have taught me more than I ever thought college had the ability to.

With time to process and ponder the next chapter of my life comes many apprehensions, as well as, excitements and possibilities. Currently, with my diploma and  and my new journey in my professional career, I see nothing but new and intriguing experiences to build on from college.

Time management, adaptability, responsibility, confidence, maturity, teamwork, faith and more are just a few of the many skills and lessons that college has taught me. In college you are surrounded by people with similar aspirations, responsibilities and dreams. Parents, professors, coaches and more are always behind you 100% pushing and helping you in every way possible. As I prepare myself for this next chapter, I realize I won’t be alone, however, it will be an environment totally different from that of a college or university.

Like mentioned, college has taught me a long list of things, however one of the most important would be facing and overcoming a challenge.  This skill is one that I have been faced with from the minute I stepped on to campus, until I was handed my diploma. Facing and dealing with a challenge is something that has become a more evident reality, specifically while on my own at school.

No matter what type of encounter I had to deal with, these constant challenges have allowed me to grow into a strong, confident and intelligent professional. Not only will these experiences help me in every aspect of my life, (especially work), but they have allowed for receiving my diploma to be that much sweeter.

Excelling in school and working hard for my education is something that no one can ever take away from me. Conquering tasks, challenges, responsibilities, work, sports, studying, exams and more have provided life-changing experiences that will act as stepping-stones to my adult and professional life. I know that my future provides even more challenges that I must overcome, but I couldn’t be more thankful for the people, places, and situations that have challenged me and made me into the strong person that I am today.

Frugal Finds: Outfit Under 40

My love for brands, clothing and shopping is indeed real, however, I can never turn away from a good bargain. With money tight this time of year, finding one makes it all the better. With that, all I must say is, Old Navy Clearance rack. With two recent great finds matched with my Bella sunglasses by A.J. Morgan at Ruche, you are looking at an entire ensemble under $40. (not joking) frugal.finds.1

& the embroidered slacks were bought for a whopping $8.99 !

For a not so grand total of $37.98! Personally I can’t believe it, yet I am thrilled and anxious to mix and match each with my wardrobe.

Often people are apprehensive about shopping among the clearance racks; the clothes may be out of style or a trend that has come and gone. However, the best items on a sale or clearance rack are the traditional pieces that never go out of style. I feel like I have struck  gold with these three purchases, and all it took was a little extra digging.

May Obsessions

My May obsessions were inspired by the numerous events that took place throughout the past few weeks. These are my current favorites; products and fashion pieces I just can’t get enough of. From a stylish skirt, a convenient snack, amazing heels and a cute way to capture any memory, these products of May are all must-haves!

May 2014

1. The Pome Blossom Skirt from Anthropologie was a piece I bought in April, but one that I have been able to wear on a few different occasions since its date of purchase. The skirt is vibrant and has a way of bringing in your waist, making the look even more flattering. There is a thin layer of tulle underneath the skirt that makes it, and the embroidery, pop. It is pictured most with a casual white tee, however my favorite look was pairing it with a matching peach color tee like the floral embroidery.

2. The FUJIFILM Instax Mini 7S is the modern-day Polaroid. On any occasion it is so fun and easy to carry in your purse to capture a moment and instantly relive it. This specific camera prints small photographs in color. I have noticed that everywhere and anywhere I take it, it is a hit. People love the idea of seeing the flash go off and watching the small print release from the camera. Not only is the camera a unique way of reliving moments, but the photos themselves make for great conversation starters, as well as a cute way to decorate a cork board!

3. Caitz by Steve Madden are a cognac strappy sandal heel that are ideal for the warm weather. The 3 1/2 leather heels are excellent with a pair of cropped jeans, but work well with a dress, or to dress up a pair of shorts. Their color and sexy look make the heel very feminine and chic; something that no matter what your style of fashion is, can be incorporated to upgrade all ensembles.

4. Uptown by Lia Sophia was a gracious graduation gift from my mother. Its versatility and loud statement is what really caught the attention of us both, and I knew it was something I had to have. It’s a heavy piece, but like mentioned, works with almost any outfit. Pearls are my absolute favorite jewelry piece and I love wearing colorful outfits and balance it out with all pearl accessories. This necklace was a great investment and gift from my mother. Currently and in the future, I will wear this casually, as well as, a piece to dress up in business attire.

5. “On the go” has really been the perfect theme of this month, thus far. Leaving school, traveling to Hollidaysburg, packing to move to my new house, traveling to Washington D.C. and more have been on the agenda, and easy and yummy snacks are a must. I was introduced to the many different trek mixes by Trader Joe’s but it wasn’t until my mom recommended the Breakfast Trek Mix that I knew I found my favorite. The individually wrapped pouches include: granola bites, almonds, yogurt chips and dried cranberries. When eaten all together the taste is delicious and the serving size is just right. Perfect for a quick breakfast or afternoon snack!

As the date of moving in to my own home gets closer, my urge to obtain recipes from my mother has significantly increased. When the recipes are quick, easy, healthy and make great left overs they really are hard not to grab on to. Adapting to the change of living in a home of just two, and having to prepare most meals alone for us both, will allow me to cherish these versatile and simple meals.

My mom’s Chicken Avocado Tostadas can be prepared quickly, make great leftovers and has a simple recipe that can be changed to make a meal that is perfect for anyone. The preparation and assembly of this recipe truly is simple and toppings can be changed and adapted to meet any acquired taste.

As my first meal of the summer on the back patio, this serving ( 2 tostadas), was a colorful, healthy and scrumptious meal that was perfectly satisfying. Enjoying this with the entire family was great, but I can see this meal being ideal throughout the summer; a refreshing dinner and effortless to pack in a lunch for the next day at work.

Ingredients:

  • 4 cups grilled chicken
  • Mexican seasoning (1 packet )
  • 8 small soft tortilla shells
  • olive oil
  • 1 medium onion, thinly sliced rings
  • 2 thinly sliced peppers
  • fajita sauce ( packet )
  • 2 cups shredded cheddar cheese
  • 2 cups shredded lettuce
  • 1 cup cherry tomatoes (sliced in half)
  • 1-2 sliced avocado
  • sour cream (topping)
  • salsa (topping)

Makes approx. 8 tostadas – 4 servings


 

1. Preheat oven to 300 degree F

2. Grill chicken breasts. Slice chicken until shredded. Place in skillet to warm – low heat. Stir in one packet of Mexican seasoning.

3. Fill the bottom of a separate skillet with olive oil. Place tortilla shells, one at a time, into oil to brown lightly on both sides.

4. Cut and slice the peppers and onions on board. When the tortilla shells are done browning saute onions and peppers in the remaining oil. Stir in one packet of fajita sauce.

5. Place browned tortillas on to baking sheet.

6. Top each tortilla with shredded chicken, shredded cheese and sautéed peppers and onions.

7. Bake in oven for 5-10 minutes.

8. Remove from oven. Top each with shredded lettuce, cherry tomatoes, slices of avocado, a dollop of sour cream and a small scoop of salsa.

College Fashionista: “Sun Hat, Fun Hat”

Fall of my senior year I was Saint Vincent College’s Style Guru rep in which I posted STYLE ADVICE OF THE WEEK, to the College Fashionista site. This past spring semester, and throughout the upcoming summer, my best friend Oliviahas taken over as Saint Vincent College’s Style Guru, posting an ACCESSORIES REPORT each week.

Just last week her post, Sun Hat, Fun Hat, featured me, two of my May Obsessions, AND a hat that will be perfect for the entire summer. My two May Obsessions, (post to come soon) the white lace top from Anthropologie and cognac Steve Madden heels, were great for a casual look. Her post discussed how versatile sun hats can be; ladies are able to wear them with sundresses, bathing suits, button-downs and more, as well as, “a fashionable way to keep the bright rays out of your eyes and make a statement this summer.”

Throughout my three years at college, many of the normal student breaks were spent in the dorms due to me playing a varsity sport. Even winter break, when the entire campus was able to go home for a month, my teammates and I were left to fend for ourselves when we weren’t in the gym.

When it came to food there were plenty of team meals, but sometimes relaxing in my dorm room was exactly what I needed. Although it sounds rather lonely, my mother use to pack up a cooler full of delicious homemade food that I was able to keep in my refrigerator. My absolute favorite item that she constantly packed was her homemade butternut squash soup.

Clearly its taste is what I enjoy most; the strong taste of curry along with the smooth and subtle hints of squash, onions and garlic. The recipe is as simple as it gets and it is a meal that you can prepare one night, pack up in the fridge and have throughout the week. I enjoy eating it with a handful of roasted almonds, but it is the perfect sidekick to a salad or starter for a large meal.

Ingredients:

  • 2 butternut squashes
  • olive oil
  • salt
  • 2 onions
  • 3 garlic cloves
  • 2 tablespoons curry powder
  • 6 cups chicken broth
  • 1/3 cup half and half

1. Preheat oven to 400 degree F

2. Cut both butternut squashes in half. Remove all seeds and place on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast in the oven for 45 to 50 minutes.

3.  Chop onions and garlic and saute over medium heat. Add the curry powder and salt to taste, along with one tablespoon of olive oil. Stir and saute until the onions are soft.

4. Remove squash from oven and let cool.

5. Scoop two squash halves into blender. Then, add half of the onion, garlic and curry powder mixture and puree.

6. Remove the puree into large pot on stove.

7. Repeat step 5 and place the second puree into pot.

8. Add in chicken broth and half and half. Whisk well until entirely mixed.
